  • 34 Idaho potatoes
  • 3 tbsp fresh grated Parmesan cheese
  • 2 tsp white truffle oil (adjust to taste)
  • Coarse salt or sea salt, to taste
  • Parsley (optional garnish)

Parmesan Aioli

  • 1/2 cup mayonnaise
  • 1/4 cup fresh grated Parmesan cheese
  • 1 tsp fresh lemon juice
  • 1 tsp Worcestershire sauce
  • 1 tsp Dijon mustard
  • Pinch of salt
  • Pinch of black pepper

Instructions

  1. Prepare the Parmesan Aioli: Combine mayonnaise, Parmesan cheese, lemon juice, Worcestershire sauce, Dijon mustard, salt, and black pepper in a small blender. Pulse a few seconds until well combined. Set aside.
  2. Cut and soak potatoes: Wash potatoes thoroughly and cut into thin straws, not too thin or thick for even cooking. Rinse the cut potatoes under cold running water. Soak them in cold water for about 30 minutes, then rinse and drain again to remove excess starch. Pat dry with a towel.
  3. Air-fryer method: Toss the dried potato fries with a little olive oil and a sprinkle of salt. Spread them in one or two layers in the air fryer basket, depending on your model and desired crispiness. Air fry at 400°F (200°C) for about 20 minutes, tossing every 5 minutes for even cooking.
  4. Double frying method: Heat oil in a fryer or deep pan to 350°F (175°C). Fry potatoes in batches for 4-5 minutes and drain on paper towels. Increase oil temperature to 400°F (200°C) and fry again until golden brown and crispy. Drain on fresh paper towels and sprinkle with salt. Keep warm in a 200°F (90°C) oven if needed.
  5. Toss with truffle oil and Parmesan: Once fries are cooked, place them in a large mixing bowl, drizzle with white truffle oil, and sprinkle with fresh Parmesan cheese. Toss quickly to coat evenly.
  6. Serve: Garnish with optional parsley and serve immediately with the prepared Parmesan aioli for dipping.

Notes

  • You can use frozen fries for convenience; cook according to package instructions using air fryer, oven, or fryer, then toss with truffle oil and Parmesan while hot.
  • Adjust truffle oil amount to your taste preference as it is very aromatic and potent.
  • For extra crispy fries in the air fryer, use a single layer and cook in batches.
