Shrimp Scampi

Garlic Bread

  • 4 thick slices of French or Italian bread
  • Garlic butter (made by mixing 4 tbsp softened unsalted butter with 2 garlic cloves minced and 1 tbsp chopped fresh parsley)

Instructions

  1. Prepare the Garlic Bread: Preheat the oven to 375°F (190°C). Spread the prepared garlic butter evenly on each slice of bread and arrange them on a baking sheet.
  2. Bake the Garlic Bread: Bake for 8-10 minutes or until the bread is golden and toasted. Remove from oven and set aside.
  3. Cook the Shrimp: Heat 1 tablespoon of olive oil and 2 tablespoons of butter in a large skillet over medium heat.
  4. Sauté Garlic: Add minced garlic to the skillet and sauté for 1-2 minutes until fragrant, being careful not to burn it.
  5. Season and Cook Shrimp: Season shrimp with salt and pepper, then add them to the skillet in a single layer. Cook for 2-3 minutes per side until pink and opaque. Remove shrimp and set aside.
  6. Make the Sauce: In the same skillet, add 1 tablespoon of butter and pour in the dry white wine (or chicken broth). Let it simmer for 1-2 minutes to reduce slightly.
  7. Finish the Sauce: Stir in freshly squeezed lemon juice, red pepper flakes if using, and the remaining butter. Mix until the sauce is smooth and well combined.
  8. Combine Shrimp and Sauce: Return the cooked shrimp to the skillet and toss gently to coat them evenly with the sauce.
