Instructions

  1. Prep the ingredients: Shred the rotisserie chicken into bite-sized pieces. Slice mushrooms; dice the onion; slice the carrots; chop the celery stalks; and mince the garlic cloves to prepare everything for cooking.
  2. Sauté the aromatics: Heat a splash of olive oil in a large pot over medium heat. Add the diced onion, sliced carrots, chopped celery, and minced garlic. Cook for 5 to 7 minutes until the vegetables soften and become fragrant.
  3. Cook the mushrooms: Stir in the sliced mushrooms and cook for 3 to 4 minutes until they release their moisture and begin to brown slightly.
  4. Add broth & herbs: Pour in the 6 cups of chicken broth and bring the mixture to a gentle simmer. Then add 1 teaspoon of dried thyme to infuse the soup with herbal notes.
  5. Add chicken & simmer: Add the shredded rotisserie chicken to the pot. Allow everything to simmer together gently for about 20 minutes so the flavors meld and develop.
