Instructions

  1. Reserve crust crumbs: Carefully set aside some of the pie crust from the pumpkin pie to use later as a crunchy topping for the pie balls after they are coated.
  2. Form the pie ball mixture: Break up the chilled pumpkin pie, including filling and crust, into a large bowl or the bowl of an electric mixer. Beat on low speed until the mixture comes together into a moist, cohesive ball. Alternatively, mix the pie pieces together by hand in a large bowl to achieve the same result.
  3. Shape pie balls and chill: Roll the pie mixture into approximately 2-tablespoon sized balls. Place these balls onto a parchment-lined baking sheet. Chill them in the freezer for 30 minutes or in the refrigerator for 2 hours to firm up.
  4. Melt coating and dip: Melt the vanilla candy coating or almond bark according to package instructions in a shallow bowl. Using a fork, dip each chilled pie ball into the melted coating, turning to completely cover it. Lift the ball out, allowing excess coating to drip back into the bowl.
  5. Decorate and set: Transfer each coated pie ball onto the parchment-lined baking sheet. Immediately sprinkle with the reserved pie crust crumbs to garnish. Repeat this dipping and decorating process for all the pie balls.
  6. Let set: Allow the coated pie balls to rest at room temperature until the candy coating hardens completely before serving.
