Ingredients

Scale

Oat Base

  • 2/3 cup peanut butter
  • 3/4 cup old fashioned (rolled) oats
  • 2 tbsp maple syrup

Regular Filling

  • 1 tbsp peanut butter per oat cup

Protein Filling

  • 1/2 cup peanut butter
  • 3 tbsp protein powder

Chocolate Coating

  • 1 cup chocolate chips (melted)
  • Flaky sea salt (optional)

Instructions

  1. Prepare the oat base: In a bowl, mix together the peanut butter and maple syrup until smooth and well combined. Next, add in the rolled oats and stir until the mixture is evenly combined to form the oat base.
  2. Form the bases: Spoon about 2 tablespoons of the oat mixture into each cavity of silicone molds or liners. Use a spoon or cookie scoop to press down firmly and evenly.
  3. Add the filling: Choose your filling option: either place a dollop of plain peanut butter (about 1 tablespoon) on top of each oat base, or mix 1/2 cup peanut butter with 3 tablespoons protein powder until smooth and spread this protein filling evenly on each base.
  4. Freeze the cups: Place the molds in the freezer for 20 minutes to firm up the base and filling.
  5. Melt the chocolate: Meanwhile, melt the chocolate chips with 2 teaspoons of oil in the microwave in 30-second intervals, stirring thoroughly between each interval until smooth and fully melted.
  6. Add chocolate coating: Remove the oat cups from the freezer and spoon the melted chocolate over each one to cover the top evenly.
  7. Final freeze: Return the cups to the freezer and chill for an additional 20 minutes until the chocolate coating is set and firm.
  8. Serve: Remove the oat cups from the silicone liners, sprinkle with flaky sea salt if desired, and enjoy your delicious peanut butter oat cups!

Notes

  • Mix the maple syrup and peanut butter thoroughly before adding the oats to ensure even sweetness and texture.
  • Use silicone liners or molds for best results and easy removal of the cups.
  • If your peanut butter is very creamy or runny, the freezing time might be longer; keep freezing until it is no longer runny.
  • Melt the dark chocolate with a small amount of oil to achieve a smooth, glossy finish. Heat in 30-second increments and stir well between each to avoid burning.
  • A cookie scoop helps to portion the oat base evenly into the molds.
  • For a protein boost, mixing protein powder into the peanut butter filling is a great option.
