Ingredients

Scale

Peanut Butter Mixture

  • 1 tablespoon butter, melted
  • 1 cup peanut butter (smooth or crunchy)
  • 1 cup powdered sugar (icing sugar)
  • 1 cup Rice Krispies cereal

Chocolate Coating

  • 2 cups semi-sweet chocolate, chopped or chocolate chips

Instructions

  1. Prepare Refrigeration Area: Clear space in your refrigerator for large plates or baking sheets. Cover the plates or baking sheets with parchment paper and set aside to prepare for setting the balls.
  2. Mix Peanut Butter Base: In a medium-sized mixing bowl, combine the melted butter, peanut butter, and powdered sugar. Use a stand mixer or handheld mixer to blend them until smooth and fully combined.
  3. Add Rice Krispies: Gently fold in the Rice Krispies cereal into the peanut butter mixture to maintain the cereal’s crunch without crushing it.
  4. Form Balls and Chill: Take spoonfuls of the mixture and roll into 1 to 1 ½ inch balls or blobs. Place them on the prepared parchment paper and refrigerate for at least 3 hours until they are firm and set.
  5. Melt Chocolate: Slowly melt the semi-sweet chocolate either in the microwave in short bursts or on the stovetop using a double boiler. Avoid boiling or overheating. If the chocolate is not smooth, stir in a teaspoon or two of butter to improve texture and consistency.
  6. Dip Balls in Chocolate: Remove the chilled peanut butter balls from the refrigerator. Using a small fork, stab each ball and dip it into the melted chocolate, rolling to coat completely and allowing excess chocolate to drip off.
  7. Set Dipped Balls: Return the chocolate-coated balls to the parchment paper and place them back in the refrigerator for a few more hours to allow the chocolate to harden and fully set.
  8. Optional Chocolate Drizzle: Use any leftover melted chocolate to drizzle over the balls for decoration. Transfer the chocolate into a small resealable bag, cut a small hole at a corner, and squeeze to drizzle. Refrigerate again until the drizzle is set.

Notes

  • You can store these chocolate Rice Krispie balls either at room temperature or in the refrigerator. They will remain fresh for up to 5 days.
  • Adding unsalted butter or vegetable oil to the melted chocolate can make it smoother and easier to work with.
  • Make sure to chill the peanut butter balls well before dipping them in melted chocolate to prevent them from falling apart.
