Potatoes
- 1.5 lbs baby gold or Yukon gold potatoes (about 10–12 small potatoes)
Parmesan Coating

- Preheat and Prepare Baking Sheet: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it to prevent sticking.
- Slice and Score Potatoes: Slice the potatoes in half lengthwise. Optionally, score the cut side lightly with a knife to help flavors absorb better and create extra texture.
- Make the Parmesan Mixture: In a small bowl, combine grated Parmesan, garlic powder, salt, and pepper. Spread this mixture evenly across the prepared baking sheet to form a cheesy layer.
- Prepare Potatoes for Baking: Brush the cut side of the potato halves with olive oil or melted butter. Place them cut-side down onto the Parmesan mixture on the baking sheet, pressing gently so the cheese sticks.
- Roast the Potatoes: Bake for 25-30 minutes or until the potatoes are fork-tender and the Parmesan crust is golden brown and crispy.
- Serve and Garnish: Let the potatoes cool for a couple of minutes before gently lifting them from the tray. Sprinkle with chopped parsley and a little extra Parmesan if desired.
