Base
- 200 g green olives (pitted)
- 150 g feta cheese (crumbled)
- 100 g cream cheese (room temperature)
- 2 tbsp extra virgin olive oil
- 1 garlic clove, minced
- Zest of 1 lemon
- Juice of ½ lemon
Add-ins
- 1 roasted red pepper, chopped
- 1 tsp dried oregano
- ½ tsp chili flakes (optional)
- Freshly ground black pepper, to taste
Topping (Optional)
- 2 whole green olives
- Drizzle of olive oil
- Combine base ingredients: In a food processor, add the green olives, crumbled feta cheese, cream cheese, extra virgin olive oil, minced garlic, lemon zest, and lemon juice. Blend until the mixture is mostly smooth but still retains a slightly textured consistency.
- Add flavorings: Add the chopped roasted red pepper, dried oregano, chili flakes (if using), and freshly ground black pepper. Pulse the food processor 2–3 times to incorporate these add-ins while maintaining some chunkiness in the spread.
- Prepare to serve: Spoon the prepared olive spread into a serving jar or bowl. Drizzle the top lightly with olive oil and garnish with the two whole green olives for an attractive presentation.
- Chill the spread: Cover and refrigerate the olive spread for 30 minutes to allow the flavors to meld and intensify, enhancing the overall taste.
- Serve: Serve chilled with pita chips, crostini, or a selection of raw vegetables for dipping.
Notes
- You can adjust the chili flakes to your preferred spice level or omit them entirely for a milder spread.
- For a smoother texture, blend the spread longer; for chunkier texture, pulse fewer times after adding the add-ins.
- This spread can be stored in an airtight container in the fridge for up to 4 days.
- Try using different olives like Kalamata for variations in flavor.
- If cream cheese is not available, a thick Greek yogurt can be substituted for a lighter option.
