  • 4 oz sharp white cheddar cheese, grated

Seasoning and Herbs

  • 1 tsp fresh thyme leaves (optional)
  • 1/4 tsp black pepper
  • 1/4 tsp sea salt

Instructions

  1. Prep the Bread: Spread a thin layer of softened butter on one side of each slice of sourdough bread to ensure a golden, crispy crust when grilled.
  2. Assemble the Sandwich: On the unbuttered side of two slices, spread a generous layer of fig jam evenly across the surface.
  3. Add Cheeses: Spread softened goat cheese over the fig jam, then sprinkle with black pepper and sea salt. If using, add fresh thyme leaves. Top with grated sharp white cheddar cheese evenly.
  4. Top and Grill: Place the remaining two slices of bread on top with the buttered sides facing outward. Heat a non-stick skillet or griddle over medium heat, then place sandwiches onto the skillet.
  5. Cook Until Golden: Grill for 3-4 minutes on one side until golden brown and crispy. Use a spatula to press down gently to help melt the cheeses and bind the sandwich.
