  • 3 cups all-purpose flour (375 g)
  • 1 teaspoon ground cinnamon

Instructions

  1. Soften oats: In a small bowl, combine 1 cup of rolled oats with 1 cup (240 ml) of warm milk. Let it sit for 10 minutes to soften the oats and infuse the milk with their nutty flavor.
  2. Activate yeast: In a separate bowl, dissolve 2 teaspoons of active dry yeast in 1/4 cup (60 ml) of warm water. Add 1 tablespoon of honey and let it rest for 5-10 minutes until the mixture becomes bubbly, indicating the yeast is active.
  3. Combine wet ingredients: To the yeast mixture, add the softened oats, 1/4 cup (60 ml) of melted butter, and the remaining 1/4 cup (60 ml) of honey. Stir until all wet ingredients are thoroughly combined.
  4. Mix dry ingredients: Gradually add 3 cups (375 g) of all-purpose flour, 1 teaspoon of ground cinnamon, and 1/2 teaspoon of salt to the wet mixture. Stir until a shaggy dough forms.
  5. Knead the dough: Transfer the dough onto a lightly floured surface and knead for about 8-10 minutes until it becomes smooth and elastic. If the dough is sticky, gradually add more flour, a tablespoon at a time, to achieve the right consistency.
  6. First rise: Place the kneaded dough in an oiled bowl. Cover with a damp cloth and leave in a warm spot for 1 to 1.5 hours until the dough doubles in size.
  7. Shape and second rise: Punch down the risen dough to release air bubbles. Shape it into a log and place it in a greased loaf pan. Cover and let it rise again for 30-40 minutes.
  8. Bake the bread: Preheat your oven to 375°F (190°C). Bake the loaf for 30-35 minutes until the crust turns golden brown and sounds hollow when tapped.
  9. Cool and serve: Remove the bread from the pan and cool it on a wire rack. Once cooled, slice and enjoy your freshly baked honey cinnamon bread.
