Instructions

  1. Make the Filling: In the bowl of a stand mixer, combine the sweetened condensed milk, peppermint extract, and vanilla extract. With the mixer on low speed, gradually add half of the powdered sugar. Continue adding the remaining powdered sugar in small increments until a dough-like consistency forms.
  2. Prepare the Dough: Sprinkle about 3 tablespoons of powdered sugar onto a piece of parchment paper. Knead the dough a few times on the parchment to fully combine the ingredients. Roll the dough out into a ½-inch thick circle, sprinkling powdered sugar on top as needed to prevent sticking.
  3. Cut Patties: Using a 1 to 1 ½-inch cookie cutter or the rim of a small glass, cut out circles from the dough. If the dough becomes too warm and sticky, place it in the freezer for 15 minutes to firm up. Transfer the peppermint patties to a parchment-lined baking sheet and freeze for 15 minutes to set.
  4. Melt the Chocolate: Melt the dark chocolate in the microwave in 30-second intervals, stirring well after each to avoid burning. Allow the chocolate to cool slightly, about 3 to 4 minutes, before dipping.
  5. Dip and Decorate: Using a fork, dip each peppermint patty into the melted chocolate, flipping it to coat both sides evenly. Place the coated patties back onto the parchment-lined baking sheet. If desired, sprinkle with decorative sprinkles while the chocolate is still wet.
