Wet Ingredients
- 3 medium ripe bananas (about 12 oz/360 g)
- 2 large eggs
- ¼ cup (60 g) nut butter (almond, peanut, cashew, or sunflower seed butter)
- 1 tsp vanilla extract
Dry Ingredients
- ⅓ cup (70 g) granular sweetener (monk fruit or brown sugar)
- ⅙ tsp sea salt
- 1 ½ cups (150 g) oat flour (or preferred flour)
- ½ cup (50 g) cocoa powder
- 2 tsp baking powder
- ½ cup (50 g) protein powder (optional, replaces ½ cup flour)
Add-ins
- ¼ cup (40 g) chocolate chips
- Preheat oven: Heat your oven to 350°F (180°C) and prepare a 20 cm (7.9 inch) loaf pan by lining it with parchment paper or greasing it with oil to prevent sticking.
- Mash bananas: In a large mixing bowl, mash the three ripe bananas with a fork until completely smooth to create a creamy base for the bread.
- Mix wet ingredients: Stir the nut butter and eggs into the mashed bananas until well combined. Then add the granular sweetener, vanilla extract, and sea salt. Whisk or stir the mixture vigorously for about two minutes until smooth and uniform.
- Add dry ingredients: Gradually stir in the oat flour (or a mixture of oat flour and protein powder if using), cocoa powder, and baking powder. Mix thoroughly until the batter is smooth and all ingredients are well combined. Fold in the chocolate chips gently to distribute them evenly.
- Bake: Pour the batter into the prepared loaf pan. Optionally, sprinkle extra chocolate chips on top for added texture and flavor. Bake in the preheated oven for 30 to 40 minutes, or until a toothpick inserted into the center comes out clean.
- Cool: Remove the banana bread from the oven and allow it to cool in the pan for about 15 minutes. Then transfer it to a wire rack and let it cool completely before slicing to ensure the best texture and flavor.
Notes
- You can substitute the protein powder for an equal amount of oat flour if you prefer.
- Use your favorite nut butter depending on taste and dietary preferences.
- For a moister bread, ensure your bananas are very ripe.
- Oat flour can be replaced with other gluten-free flours if necessary, but baking time may slightly vary.
- Store the bread in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
