Dry Ingredients
- 1 1/3 cup almond flour
- 1/4 tsp salt (only if peanut butter isn’t salted)
Wet Ingredients
- 1 cup natural peanut butter
- 1/4 cup maple syrup
- 1 tsp vanilla extract
Chocolate Coating
- 1 cup chocolate chips
- 1 tsp coconut oil
- Mix Ingredients: In a bowl, combine the almond flour, natural peanut butter, salt (if using), maple syrup, and vanilla extract. Stir thoroughly until the mixture is uniform and can hold its shape.
- Shape and Chill: Roll the mixture into small bite-sized balls. Place them on a tray and refrigerate for 30 minutes to firm up.
- Melt Chocolate: In a small bowl, melt chocolate chips with coconut oil by heating in 30-second intervals in the microwave, stirring after each interval until smooth and fully melted.
- Dip Buckeyes: Using a fork, dip each chilled ball into the melted chocolate, covering about two-thirds of the ball. Lift out carefully and place on a tray to set. Repeat with all balls.
- Chill to Set: Return the dipped buckeyes to the fridge for at least 15 minutes to allow the chocolate coating to harden completely before serving.
- Store: Keep the buckeyes refrigerated for freshness and enjoy within a week.
Notes
- You can substitute oat flour for almond flour, but start with 3/4 cup and add more as needed to get the right consistency for rolling.
- If your peanut butter is salted, omit the added salt in the recipe.
- Use natural peanut butter for the best flavor and texture.
- Store the buckeyes in an airtight container in the fridge to maintain freshness.
