Ingredients

Scale

Marinade

  • 1 lemon, juiced and zested
  • 1/4 cup extra virgin olive oil
  • 3 garlic cloves, finely minced or 1 tsp dried garlic powder
  • 1 tsp dried oregano
  • 1/2 tsp smoked paprika
  • 1/2 tsp plus a pinch of sea salt
  • 1/4 tsp coarse black pepper

Main

  • 1 pound thin-sliced chicken breast
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup fresh chopped parsley
  • Additional lemon wedges for garnish

Instructions

  1. Prepare the Marinade: In a large mixing bowl, combine the lemon zest and juice, olive oil, garlic, oregano, smoked paprika, sea salt, and black pepper. Whisk thoroughly until emulsified and set aside 1/4 cup of this mixture for later use.
  2. Marinate the Chicken: Add the thin-sliced chicken breasts to the bowl with the remaining marinade. Use tongs to coat each piece evenly. Cover the bowl with plastic wrap and refrigerate for 30 minutes to allow the flavors to develop.
  3. Heat the Skillet: Warm a nonstick skillet over medium-high heat. Once hot, add a small drizzle of olive oil to the pan to prevent sticking.
  4. Cook the Chicken: Place the marinated chicken breasts into the skillet in a single layer. Cook undisturbed for 4 to 5 minutes until the bottom side is golden brown and cooked halfway through.
  5. Flip and Finish Cooking: Flip the chicken breasts carefully and cook for an additional 3 to 4 minutes until cooked through, checking that the juices run clear when sliced and internal temperature reaches 165°F (74°C).
  6. Serve: Transfer the cooked chicken to a serving plate. Drizzle the reserved marinade over the top, then sprinkle generously with chopped fresh parsley and crumbled feta cheese. Garnish with additional lemon wedges and serve immediately.

Notes

  • For a spicier kick, add a pinch of red pepper flakes to the marinade before marinating the chicken.
  • This dish pairs wonderfully with Greek salad, rice, or roasted vegetables for a complete meal.
