  • 0.5 cup Grated Parmesan Cheese, divided for mixing and topping

Instructions

  1. Roast the Garlic: Preheat your oven to 400°F (200°C). Trim the tops off two heads of garlic, drizzle with olive oil, and wrap each head tightly in aluminum foil. Place the wrapped garlic heads on a baking sheet and roast in the oven for 40-50 minutes, or until the cloves are soft and caramelized. Remove from the oven and let them cool slightly before handling.
  2. Prepare the Garlic Paste: Once the roasted garlic is cool enough to handle, squeeze the soft cloves out of the skins into a mixing bowl. Mash the cloves into a smooth paste using a fork, ensuring no large chunks remain.
  3. Mix the Dip Base: Add the room-temperature cream cheese and sour cream to the garlic paste. Stir the mixture thoroughly until it becomes smooth and creamy.
  4. Add the Cheeses and Seasoning: Fold in the shredded mozzarella cheese and half of the grated Parmesan cheese. Season with salt and pepper to taste. Mix well until all ingredients are evenly incorporated.
  5. Bake the Dip: Preheat your oven to 350°F (175°C). Transfer the garlic bread dip mixture into a baking dish, spreading it out evenly. Sprinkle the remaining Parmesan cheese on top. Bake for 25-28 minutes, until the dip is bubbly and lightly browned on the surface.
  6. Garnish and Serve: Remove the dip from the oven and let it cool for about 5 minutes. Sprinkle freshly chopped parsley on top for garnish. Serve warm alongside crostini or crackers for dipping.
