Ingredients

Scale

Fish and Marinade

  • 4 cod fillets (6 oz each)
  • 2 tbsp fresh ginger, grated
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp honey
  • 1 tbsp lemon juice

Garnish

  • 2 green onions, chopped
  • 1 tbsp toasted sesame seeds (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for baking the cod fillets evenly.
  2. Prepare Marinade: In a bowl, whisk together the low-sodium soy sauce, honey, freshly grated ginger, and lemon juice until well combined to create a flavorful marinade.
  3. Marinate Cod: Place the cod fillets in a shallow dish and pour half of the marinade over them. Allow the fillets to marinate for 15-30 minutes to absorb the flavors.
  4. Bake Cod: Arrange the marinated cod fillets on a greased baking sheet and brush the remaining marinade over the tops. Bake in the preheated oven for 12-15 minutes, or until the fish flakes easily with a fork.
  5. Toast Sesame Seeds (Optional): In a dry skillet over medium heat, toast the sesame seeds until they turn golden and aromatic, about 2-3 minutes, stirring frequently to prevent burning.
  6. Serve: Garnish baked cod with chopped green onions and toasted sesame seeds. Serve immediately for the best flavor and texture.

Notes

  • Marinating the cod for at least 15 minutes improves flavor but do not exceed 30 minutes to prevent the fish from becoming too soft.
  • Use low-sodium soy sauce to control the saltiness of the dish.
  • To toast sesame seeds, watch carefully as they can burn quickly.
  • Serve with steamed rice and sautéed vegetables for a complete meal.
