For the Pinwheels

  • 1 sheet puff pastry, thawed but kept cold
  • 1 large egg, beaten with a splash of water (for egg wash)

Instructions

  1. Prepare the creamy filling: In a mixing bowl, combine the softened cream cheese, grated Parmesan, mayonnaise, garlic powder, onion powder, black pepper, and red pepper flakes if using. Squeeze the thawed spinach thoroughly using paper towels to remove all moisture, then fold it into the cream cheese mixture until evenly blended.
  2. Assemble the pinwheels: Lightly flour your countertop and carefully unroll the puff pastry sheet. Evenly spread the spinach filling over the pastry, leaving one long edge bare to help seal the roll. Starting from the opposite long side, roll the pastry tightly into a log shape.
  3. Chill and slice: Wrap the rolled log tightly in plastic wrap and refrigerate for at least 30 minutes to firm up. Meanwhile, preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
