Ingredients

Scale

Orzo Pasta:

  • 1 cup orzo pasta

For the Sauce:

  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 8 ounces cremini or white mushrooms, sliced
  • 4 cups fresh spinach leaves
  • 1/2 cup vegetable broth or water
  • 1/2 cup grated Parmesan cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 tablespoon fresh lemon juice
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil: In a large skillet over medium heat, heat 2 tablespoons of olive oil. Add the finely chopped onion and minced garlic, sautéing until they become fragrant and translucent, about 2-3 minutes.
  2. Add mushrooms: Add the sliced cremini or white mushrooms to the skillet. Cook them until they turn golden and tender, stirring occasionally for about 5-7 minutes.
  3. Toast orzo: Stir in the orzo pasta, tossing it in the skillet to toast briefly. This will add a nutty flavor and prevent the pasta from sticking together.
  4. Add broth: Pour in 1/2 cup of vegetable broth or water. Bring the mixture to a simmer. Cook, stirring occasionally, until the orzo is tender and has absorbed most of the liquid, approximately 8-10 minutes.
  5. Incorporate spinach: Stir in the fresh spinach leaves, cooking just until wilted, about 1-2 minutes.
  6. Finish the dish: Remove the skillet from the heat. Mix in grated Parmesan cheese until well combined. Season with salt, black pepper, optional red pepper flakes, and fresh lemon juice. Garnish with chopped fresh parsley before serving.

Notes

  • For a richer flavor, consider adding a splash of cream or a tablespoon of butter at the end.
  • Enhance texture and flavor with toasted pine nuts or walnuts sprinkled on top.
  • Pair this dish with grilled chicken or fish for a complete, satisfying meal.
