  • 3/4 cup granulated sugar
  • 1 tsp instant coffee
  • 3 eggs (at room temperature)
  • 1 egg yolk (at room temperature)
  • 1 tsp vanilla extract
  • 3/4 cup all purpose flour
  • 6 tbsp cocoa powder
  • 1/2 tsp baking powder

Coffee Frosting Ingredients

  • 1 stick butter (at room temperature)
  • 4 oz sweetened condensed milk (cold)
  • 1 1/2 tsp instant coffee
  • 1/2 tsp hot water
  • Optional: cacao nibs or chocolate sprinkles for garnish

Instructions

  1. Preheat and prepare pan: Preheat your oven to 355°F (180°C). Line an 8×4-inch loaf pan with parchment paper to prevent the cake from sticking.
  2. Cream butter and sugar: In a stand mixer, cream together the butter, granulated sugar, and instant coffee until the mixture is light and fluffy, about 3 to 5 minutes. This ensures the cake will have a good texture.
  3. Add eggs and vanilla: Add the vanilla extract, then the eggs and egg yolk one at a time, mixing well after each addition until the batter is smooth and homogenous.
  4. Combine dry ingredients: Sift together the all-purpose flour, cocoa powder, and baking powder. Add these to the wet mixture and mix on low speed just until combined, taking care not to overmix.
  5. Bake the cake: Pour the batter into the prepared loaf pan, smoothing out the top with a spatula. Bake for 40-45 minutes, or until a wooden skewer inserted into the center comes out clean.
  6. Cool the cake: Remove the cake from the oven and let it cool in the pan for 10 minutes. Then transfer it to a cooling rack to cool completely before frosting.
  7. Prepare coffee frosting: In a small bowl, mix the instant coffee with hot water and set aside to cool. Using a whisk attachment on your mixer, whip the butter until light in color and fluffy, about 2-3 minutes.
  8. Incorporate condensed milk: Add the cold sweetened condensed milk to the whipped butter and continue to mix for another 1-2 minutes until fully incorporated.
  9. Add coffee mixture: Pour the cooled instant coffee mixture into the frosting and whip one final time to combine fully and create a smooth coffee-flavored buttercream.
  10. Frost the cake: Spread the coffee frosting evenly over the cooled chocolate loaf cake. Use a spoon to create a decorative C-shaped pattern as shown in photos. Optionally, sprinkle cacao nibs or chocolate sprinkles on top for added texture and decoration.

  • Ensure eggs, butter, and other ingredients are at room temperature for best mixing results.
