Ingredients

Scale

Chicken

  • 4 boneless, skinless chicken breasts
  • Salt and black pepper, to taste

Sauce

  • 4 cloves fresh garlic, minced
  • 1 cup low-sodium chicken broth
  • 1/4 cup freshly squeezed lemon juice (about 2 lemons)
  • 1/4 cup caper berries
  • 2 tbsp olive oil
  • 2 tsp Italian seasoning
  • 2 tbsp butter
  • 1/4 cup fresh parsley, chopped (for garnish)

Optional

  • Cooked pasta or rice, for serving

Instructions

  1. Prepare Ingredients: Mince the garlic cloves finely and squeeze the fresh lemons to collect about 1/4 cup of lemon juice.
  2. Sear Chicken: Heat olive oil in a skillet over medium-high heat. Season the chicken breasts evenly with salt and black pepper, then sear them until golden brown on both sides, about 3-4 minutes per side.
  3. Assemble in Crockpot: Place the seared chicken breasts in the crockpot in a single layer. Sprinkle the minced garlic and caper berries evenly over the chicken. Pour the chicken broth and freshly squeezed lemon juice over the top.
  4. Add Seasoning and Cook: Sprinkle the Italian seasoning evenly across the ingredients. Cover the crockpot and cook on low for 6 hours or on high for 3 hours until the chicken is cooked through and tender.
  5. Make Sauce: Once cooking is complete, remove the chicken breasts and set aside. Whisk the butter into the remaining cooking liquids in the crockpot until the sauce is smooth and slightly thickened.
  6. Serve: Place the chicken breasts on plates and spoon the sauce over them. Garnish with chopped fresh parsley. Serve over cooked pasta or rice if desired.

Notes

  • You can replace caper berries with regular capers if unavailable; adjust quantity to taste.
  • Searing the chicken before slow cooking ensures better flavor and texture.
  • Use low-sodium broth to control the salt content in the dish.
  • For a thicker sauce, you can reduce it in a saucepan after removing the chicken.
  • Leftover chicken piccata keeps well refrigerated for up to 3 days.
