Chicken
- 4 boneless, skinless chicken breasts
- Salt and black pepper, to taste
Sauce
- 4 cloves fresh garlic, minced
- 1 cup low-sodium chicken broth
- 1/4 cup freshly squeezed lemon juice (about 2 lemons)
- 1/4 cup caper berries
- 2 tbsp olive oil
- 2 tsp Italian seasoning
- 2 tbsp butter
- 1/4 cup fresh parsley, chopped (for garnish)
Optional
- Cooked pasta or rice, for serving
- Prepare Ingredients: Mince the garlic cloves finely and squeeze the fresh lemons to collect about 1/4 cup of lemon juice.
- Sear Chicken: Heat olive oil in a skillet over medium-high heat. Season the chicken breasts evenly with salt and black pepper, then sear them until golden brown on both sides, about 3-4 minutes per side.
- Assemble in Crockpot: Place the seared chicken breasts in the crockpot in a single layer. Sprinkle the minced garlic and caper berries evenly over the chicken. Pour the chicken broth and freshly squeezed lemon juice over the top.
- Add Seasoning and Cook: Sprinkle the Italian seasoning evenly across the ingredients. Cover the crockpot and cook on low for 6 hours or on high for 3 hours until the chicken is cooked through and tender.
- Make Sauce: Once cooking is complete, remove the chicken breasts and set aside. Whisk the butter into the remaining cooking liquids in the crockpot until the sauce is smooth and slightly thickened.
- Serve: Place the chicken breasts on plates and spoon the sauce over them. Garnish with chopped fresh parsley. Serve over cooked pasta or rice if desired.
Notes
- You can replace caper berries with regular capers if unavailable; adjust quantity to taste.
- Searing the chicken before slow cooking ensures better flavor and texture.
- Use low-sodium broth to control the salt content in the dish.
- For a thicker sauce, you can reduce it in a saucepan after removing the chicken.
- Leftover chicken piccata keeps well refrigerated for up to 3 days.
