4.8 from 217 reviews

This Crock Pot Creamy Chicken Parmesan Soup is a comforting, rich, and hearty meal perfect for busy days. Tender chicken breasts are slow-cooked with aromatic onions, garlic, diced tomatoes, and Italian seasoning, then finished with creamy heavy cream, grated Parmesan cheese, fresh tortellini, and spinach for a satisfying one-pot dinner. Garnished with fresh basil, it pairs wonderfully with crusty or garlic bread.

Ingredients

Scale

Chicken and Base

  • 1.5 pounds boneless, skinless chicken breasts
  • 1 cup diced onion
  • 2 cloves garlic, minced
  • 3 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 tablespoon Italian seasoning
  • Salt, to taste
  • Pepper, to taste

Finishing Ingredients

  • 1 cup heavy cream (or substitute half-and-half for a lighter version)
  • 1 cup grated Parmesan cheese
  • 1 cup tortellini (fresh or frozen)
  • 1 cup fresh spinach
  • Fresh basil, for garnish

Instructions

  1. Prepare the Crock Pot: Place the boneless, skinless chicken breasts at the bottom of the Crock Pot. Add the diced onions and minced garlic evenly on top of the chicken.
  2. Add Liquids and Seasoning: Pour the chicken broth and the can of diced tomatoes over the chicken and onions. Stir gently to combine all the ingredients. Sprinkle Italian seasoning evenly on top and season with salt and pepper to your taste.
  3. Slow Cook the Chicken: Cover the Crock Pot with the lid and cook on low heat for 6 hours. This slow cooking will ensure the chicken becomes tender and infused with the flavors of the broth and seasoning.
  4. Shred the Chicken: After the cooking time, remove the chicken breasts from the pot carefully. Use two forks to shred the chicken into bite-sized pieces. Return the shredded chicken back into the soup in the Crock Pot.
  5. Add Dairy and Cheese: Stir in the heavy cream and the grated Parmesan cheese thoroughly until the soup achieves a creamy, cohesive texture.
  6. Add Tortellini and Spinach: Add the tortellini and fresh spinach to the soup. Increase the Crock Pot setting to high and cook for an additional 30 minutes, or until the tortellini is fully heated through and tender.
  7. Serve: Ladle the soup into bowls and garnish with fresh basil leaves. Serve hot, ideally alongside crusty bread or garlic bread for a complete meal.

Notes

  • This soup pairs excellently with crusty or garlic bread to round out the meal.
  • For a lighter version, substitute half-and-half for heavy cream without compromising creaminess.
  • Optional: Add other vegetables such as carrots or bell peppers for extra nutrition and flavor.
