Instructions

  1. Preheat and Prepare: Preheat your oven to 350°F (175°C) and grease a loaf pan to prevent sticking and ensure even baking.
  2. Mix Wet Ingredients: In a large bowl, mash the overripe bananas until smooth. Add the melted vegan butter, maple syrup, almond or oat milk, and vanilla extract, mixing until the mixture is creamy and well combined.
  3. Add Dry Ingredients: Sprinkle in baking powder, baking soda, cinnamon, and salt. Stir gently until just combined to avoid overmixing.
  4. Incorporate Flour and Oats: Add the all-purpose flour and rolled oats to the wet mixture. Stir until no dry flour remains, but still with some streaks for a lighter texture.
  5. Create Cinnamon Swirl Layers: Pour half of the batter into the prepared loaf pan, smoothing the top. Spoon half of the cinnamon swirl mixture over it and use a knife to swirl gently through the batter.
