Chocolate
- 3/4 cup chopped dark chocolate or chocolate chips
Pumpkin Seeds
- 1 cup toasted, unsalted, shelled pumpkin seeds, divided (or substitute salted pumpkin seeds, and omit sea salt topping)
Optional Topping
- Melt the Chocolate: Add the chopped dark chocolate or chocolate chips to a small pot set over low heat. Stir continuously to prevent burning until the chocolate is fully melted and smooth. Remove the pot immediately from heat.
- Coat Pumpkin Seeds: Add 3/4 cup of the toasted pumpkin seeds to the melted chocolate. Gently stir until all the seeds are completely coated in the rich melted chocolate.
- Form Clusters: Using a heaping teaspoon, scoop out portions of the chocolate pumpkin seed mixture and place them onto a large plate or sheet pan lined with parchment paper or a silicone baking mat, spacing them out evenly.
- Add Toppings: Immediately sprinkle a small handful of the reserved plain pumpkin seeds on top of each chocolate cluster to add extra texture and visual appeal. If desired, sprinkle a light pinch of sea salt on top of each cluster to enhance flavor.
- Repeat the Process: Continue scooping, topping with plain seeds, and sprinkling sea salt until all the chocolate pumpkin seed mixture is used, making about 20 clusters in total.
- Chill to Harden: Place the prepared clusters in the refrigerator for at least one hour to allow the chocolate to set and harden before serving.
Notes
- You can substitute salted pumpkin seeds for the unsalted variety, but omit the sea salt topping to avoid excessive saltiness.
- Store the chocolate pumpkin seed clusters in an airtight container in the refrigerator for up to two weeks.
- For a festive twist, try using white chocolate or milk chocolate instead of dark chocolate.
- These clusters make a great homemade gift or party snack.
