Donut Batter
- 1/4 cup melted regular or vegan butter
- 1 1/4 cup regular milk, oat milk, or almond milk
- 1 cup sugar
- 1 1/2 tsp baking powder
- 1 tsp baking soda
- 1 tsp vanilla extract
- 2 cup regular or gluten free all-purpose flour
- 1 cup fresh or frozen blueberries
Vanilla Glaze (Optional)
- 1/2 cup powdered sugar
- 1 tbsp regular milk, oat milk, or almond milk
- 1 tsp vanilla extract
- Preheat the oven: Set your oven to 350°F (175°C) to prepare for baking the donuts.
- Mix wet ingredients and leavening agents: In a large mixing bowl, combine the melted butter, your choice of milk (regular, oat, or almond), baking soda, baking powder, sugar, and vanilla extract. Stir well to blend.
- Add flour: Gradually mix in the all-purpose flour (regular or gluten free), stirring just until the batter is combined to avoid overmixing.
- Incorporate blueberries: Gently fold in the fresh or frozen blueberries to distribute evenly throughout the batter without breaking them.
- Fill donut molds: Grease 14-16 donut molds lightly and pour the batter into each, careful not to overfill to prevent spillage during baking.
- Bake the donuts: Place the molds in the oven and bake for about 20 minutes or until a toothpick inserted into the donuts comes out clean.
- Prepare the glaze (optional): While donuts bake, whisk together the powdered sugar, milk, and vanilla extract until smooth for a simple vanilla glaze.
- Glaze the donuts: Once cooled slightly, drizzle the glaze atop the donuts if desired. They are also delicious without it.
Notes
- Use fresh or frozen blueberries depending on availability; if using frozen, no need to thaw before adding to the batter.
- Do not overmix the batter once flour is added to keep donuts tender.
- Make sure to grease the donut molds well to ensure easy release after baking.
- Glaze is optional and not included in nutritional calculations.
- For vegan option, use vegan butter and plant-based milk.
