Beer Cheese Dip Ingredients

  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 1/2 cup Blue Moon beer (or other pale ales)
  • 1/2 cup milk
  • 1 garlic clove (thinly minced)
  • 1/4 teaspoon Worcestershire sauce
  • 1/2 tablespoon Dijon mustard
  • 1 teaspoon hot sauce
  • 1/2 teaspoon onion powder
  • 1 1/3 cups Colby jack cheese (shredded from block)
  • 1 1/3 cups sharp white cheddar cheese (shredded from block)
  • Salt and pepper to taste
  • Tortilla chips or pretzels for serving

Instructions

  1. Create the roux: In a saucepan over medium heat, melt the butter. Once melted, add the all-purpose flour and whisk constantly until well combined, cooking for about one minute to eliminate the raw flour taste.
  2. Add liquids and seasonings: Slowly pour in the beer and milk while whisking continuously to prevent lumps and help the mixture thicken smoothly. Stir in the minced garlic, Worcestershire sauce, Dijon mustard, onion powder, and hot sauce to infuse the dip with robust flavors.
  3. Thicken the mixture: Continue stirring constantly over medium heat for up to five minutes. You will notice the mixture gradually becoming thicker and glossy as it cooks.
  4. Melt the cheeses: Remove the saucepan from heat. Gradually add the shredded sharp white cheddar and Colby jack cheeses in batches, stirring until fully melted and the dip is smooth. Taste and season with salt and black pepper according to preference.
  5. Serve warm: Transfer the beer cheese dip to a serving bowl and serve warm alongside tortilla chips or pretzels for dipping.

Notes

  • The beer can be substituted with another pale ale or even non-alcoholic beer for a milder flavor.
  • Continuous whisking is key to avoid lumps when adding the beer and milk.
  • This dip is best served warm; reheat gently if needed.
  • Adjust the level of hot sauce according to your spice tolerance.
  • Use freshly shredded cheese for better melting consistency compared to pre-shredded varieties.
