Ingredients

Scale

Dumplings

  • 1420 Frozen Dumplings

Sauce

  • 3 Tablespoons Red Curry Paste
  • 3 Tablespoons Soy Sauce
  • 2 Tablespoons Sesame Oil (or oil of choice)
  • 1 (14-ounce) can Coconut Milk
  • 2 teaspoons Fresh Ginger (minced)
  • 2 Garlic Cloves (minced)
  • 1 Tablespoon Rice Vinegar
  • 2 Tablespoons Honey (or real maple syrup)

Garnish

  • Cilantro
  • 2 Green Onions (sliced)
  • 1 to 2 Tablespoons Chili Crunch
  • Sesame Seeds
  • Baby Spinach (optional)

Instructions

  1. Preheat oven and prepare dish: Preheat your oven to 375°F (190°C). Grease a medium baking dish or ovenproof skillet to prevent sticking.
  2. Make the sauce: In a bowl, whisk together coconut milk, red curry paste, honey, soy sauce, sesame oil, rice vinegar, minced fresh ginger, and minced garlic. Taste and adjust seasoning if needed by adding more soy sauce for saltiness, rice vinegar for brightness, or curry paste for more spice.
  3. Arrange dumplings and add sauce: Place frozen dumplings in a single layer in the greased baking dish. Pour the prepared sauce evenly over the dumplings, ensuring they are mostly covered.
  4. Bake covered: Cover the dish tightly with foil and bake in the preheated oven for 20 minutes to allow the dumplings to cook through in the sauce.
  5. Bake uncovered: Remove the foil and bake for an additional 5 to 10 minutes, until the sauce is bubbling and the dumplings are tender with a slight browning if any.
  6. Add spinach and garnish: If using baby spinach, immediately top the hot dumplings with fresh spinach so it wilts slightly. Garnish generously with chopped cilantro, sliced green onions, sesame seeds, and chili crunch to add flavor and texture.

Notes

  • The recipe uses frozen dumplings, such as those from Trader Joe’s, but any store-bought frozen dumplings will work.
  • If substituting dried ginger for fresh minced ginger, use 1 teaspoon dried ginger.
  • Use fresh minced garlic or frozen garlic cubes available at many grocery stores for best flavor.
