Apple Mixture
- 1 apple, peeled, cored, and sliced into small chunks (about 3/4 to 1 cup)
- 1/2 teaspoon cinnamon
Dry Ingredients
- 1 cup plus 2 tablespoons all-purpose flour (141 grams)
- 1/2 teaspoon cinnamon
- 1/8 teaspoon ground nutmeg
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
Wet Ingredients
- 1/2 cup unsalted butter (112 grams), melted
- 3/4 cup light brown sugar (156 grams), packed
- 1 large egg
- 1 teaspoon vanilla extract
- Preheat oven and prepare pan: Preheat the oven to 350°F (180°C). Line an 8×8 inch (20×20 cm) pan with parchment paper, leaving an overhang on the sides. Alternatively, lightly grease the pan to prevent sticking.
- Prepare the apple: Peel and core the apple, then slice into small chunks to measure about 3/4 to 1 cup. Toss the sliced apple with 1/2 teaspoon cinnamon, coating evenly. Set aside. Avoid using more than 1 cup of chopped apple to maintain the right texture.
- Mix dry ingredients: In a separate bowl, whisk together the flour, remaining 1/2 teaspoon cinnamon, ground nutmeg, baking powder, and salt until well combined. Set aside.
- Combine butter and sugar: In a large bowl, whisk together the melted butter and brown sugar until thoroughly mixed and no visible pools of butter remain.
- Add egg and vanilla: Whisk the egg and vanilla extract into the butter and sugar mixture until fully incorporated and smooth.
- Incorporate dry ingredients: Gradually stir the flour mixture into the wet ingredients until the batter is uniform, with no lumps or streaks of flour remaining.
- Fold in the apples: Gently fold the cinnamon-coated apple chunks into the batter, distributing them evenly without overmixing.
- Transfer batter to pan: Spoon the batter into the prepared pan and smooth the surface into an even layer for uniform baking.
- Bake: Place the pan into the preheated oven and bake for 22-25 minutes, or until the top looks set and a toothpick inserted into the center comes out clean or with a few moist crumbs.
- Cool and slice: Allow the blondies to cool completely. If using parchment paper, lift the blondies out of the pan using the overhang and transfer to a cutting board. If the pan was greased, slice them directly in the pan before serving.
Notes
- Do not exceed 1 cup of chopped apple to ensure proper texture.
- For extra flavor, you can sprinkle a little cinnamon sugar on top before baking.
- Store blondies in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
- Reheat briefly in the microwave or enjoy chilled depending on preference.
- You can substitute the unsalted butter with salted butter but reduce added salt amount to 1/8 teaspoon.
